More Fall Canning

 N.B. Yep, another lost post from the fall...


Oh hello! More canning!!!


This time... tomatillo salsa!

We had a LOT of tomatillos this year...

So roasted them and then salsa'd them...

Let me tell you... they are SUPER yummy!

And... we had a bumper crop of tomatoes as well...

But we are going to use the pressure canner for these...

It's the second time we've used it... and it still makes us a bit nervous...

But it does work better than the water bath canner!

First we blanched the tomatoes... to get the skins off...

Ewwwy mess...

And all these little ones too... waaaayyyy too many tomatoes!

Now we pack the tomatoes in the jars...

Like this... 

And then into the pressure canner they go...

And then get it up to 11 psi and wait... 

And then wait for it to cool down and the pressure to get to 0 psi... and the little safety lock to pop down...

And then we open it up and...

Excellent!!!
