An Overabundance of Rhubarb

 Hullo! We picked rhubarb!! We only have one plant and it produces a lot!!


We gave some of it away but we figured we should do something with the rest of it.

But first it needs to be washed!

While the rhubarb is getting washed, we get to decide what to do with it.

Right then... we have our recipe! Let's get going!

We need 4 cups of diced rhubarb...

That's 1 litre for our metric friends... did you hear that Boris (UK) is going to bring back Imperial measurements??? We are ambidextrous here in Canada... sometimes...

Right... we have our 4 cups!

And then we add it to a pot with a huge amount of diced onions.

That's a lot... is this pot going to be big enough??

Cause we still need to add 1 litre of vinegar...

And an epic amount of brown sugar!

We are going to cross our claws and...

Yay!! It all fits!!! While that is blipping away...

We have some prep to do... digging out canning jars...

And washing them all!

Then we get to have a nap because the blipping is taking forever!!

*** several hours later ***
Alright, let's check on the blipping pot...

See, it's gone down quite a bit and turned a nice colour too...

We are ready to get going!

Get the lids into some blipping water... (we like the word "blipping"... thanks Jamie Oliver!)

And we've got jars blipping away in the stove.

Right then... time to jar things up! We are going to step aside for this part because it can be incredibly sticky and messy!

And voila!!! Nine jars of... what did we make again?

Oh yeah, rhubarb relish!!!

And then there was a little jar with the remnants... that's going in the fridge.
 
Whew... we are pooped!!! That's a lot of work but it's good work! Do you make anything with rhubarb?

  2. Nine jars....feel free to send one down this way. Why do you put the jars in the oven, when I can I put the jars in boiling water.....is putting them in the oven the same idea?

    2. Putting the jars in the oven is the same idea as boiling them - it's just the way Mama was taught. We have to be beary well-dressed, these photos get posted to a blog you know!

  4. Heard about rhubarb, but never had an opportunity to try it. Do you guys make rhubarb pie, too?

    1. Have not tried rhubarb pie... or rhubarb crumble or rhubarb muffins. Someone has a gluten intolerance sooo... makes baking hard!

  5. Oh my, that is a ton of rhubarb. How long does it store? Can you re-use canning jars?

    1. The rhubarb relish lasts for several years. And yes, canning jars can be reused over and over again! The rings too... just not the flat seals. They have to be new everytime.
